Ingredients
3 cups chopped fresh pineapple
2 cucumbers, peeled, seeded and sliced
1 jalapeno, seeded and diced
1/4 cup lime juice
In a large bowl, add the first 3 ingredients, pour (or squeeze) lime juice over the top, gently toss and serve.

Today I had the most amazing smoothie, I am calling it Pineapple Bliss. I took a whole pineapple (peeled and cored) and blended it with 1/2 cup coconut water and a handful of ice. Fast, simple and delish! Of course, my favorite tool to blend is my Vitamix, but a high-powered blender will work as well. Whirl all ingredients and enjoy. To save time like I did, most local grocery stores sell fresh, peeled, cored pineapple in the produce section.
